This easy pasta salad recipe is perfect for hot summer days and travels well for on the go meals! It is highly customizable as you can easily swap in various vegetables, proteins, and dressings of your choice.
Ingredients
General Directions:
- Cook pasta of choice per package directions. Drain and let cool to room temp or cool in the fridge.
- Chop vegetables (cucumber, tomato, mushrooms, pepper) into bite sized pieces.
- Grate carrots.
- In a large bowl, add vegetables and cooled pasta.
- Add feta cheese crumbles.
- Pour in Italian dressing and olive oil to taste.
- Combine completely.

Notes:
- You can easily sub out or in any other veggies to your family’s preference or based upon what you have on hand at home.
- You can add additional protein through cut up or shredded meat, or beans.
- Dressing can easily be subbed for any of your family’s favorite! Other dressings our family tends to use include balsamic vinaigrette and Caesar dressing.
- Any left overs can be stored in a sealed container for a couple of days.
