Pumpkin Spice Rice Krispy Treats

Adding pumpkin and white chocolate to Rice Krispies makes for the perfect fall treat. These did not last long in our house.

This recipe is an adapted and slightly modified version of the Pumpkin Spice Rice Krispy Treats by Georgia Johnson.

 3 tbsp unsalted butter
 ¼ cup pumpkin puree
 1 10 0z bag of mini marshmallows
 ¼ tsp Vanilla extract
 ½ tsp cinnamon
 ½ tsp pumpin pie spice
 ¼ tsp nutmeg
  tsp salt
 6 cups Rice Krispie (or other crispy rice cereal)
 2 cups White chocolate
 Sprinkles

 ¼ tsp Vanilla extract
 ½ tsp cinnamon

 ¼ tsp nutmeg

 6 cups Rice Krispie (or other crispy rice cereal)
 2 cups White chocolate
 Sprinkles
Pumpkin Spice Rice Krispies

General Directions:

  1. In a large saucepan, melt butter over medium heat.
  2. Add pumpkin pure and stir until combined and warmed thoroughly.
  3. Add marshmallows to pan. Fold in marshmallows, stirring frequently until fully melted.
  4. Remove from heat and stir in vanilla, cinnamon, pumpkin pie spice, nutmeg, and salt.
  5. Let marshmallows cool for 20 minutes (prevents soggy krispy treats).
  6. Pour mixture into bowl of Rice Krispy cereal and stir to combine.
  7. Line 11×7 baking dish with parchment paper, then grease parchment paper.
  8. Pour mixture into baking dish.
  9. Use spatula to spread rice krispies evenly around the baking dish.
  10. Add white chocolate to skillet and melt over medium heat, stirring frequently to prevent burning.
  11. Drizzle melted chocolate over the rice krispies.
  12. Sprinkle sprinkles over the top.
  13. Refrigerate for 1+ hours before cutting and serving.
  14. Store in an airtight container.

Beginner:

11. With hand over hand help, drizzle white chocolate.

12. Add sprinkles. Will need physical and verbal cues to spread out sprinkles.

Experienced:

6. Help pour mixture into bowl of Rice Krispy cereal. Help to stir to combine.

8, Help to pour into baking dish.

11. Drizzle chocolate with a spoon over top.

12. Add sprinkles to top. May need physical/verbal cues to spread sprinkles out.

Pro:

1. Cut butter and add to pan. Help stir to melt.

2. Help measure pumpkin puree and add to pan. Help stir to combine.

3. Pour mashmallows into pan. Help to fold in marshmallows while melting.

4. Help to measure and add vanilla and spices. Help to combine.

6. Help pour cooled mixture into Rice Krispy cereal. Help stir to combine.

8. Help pour into baking dish.

9. Help spread around baking dish.

10. Help measure and pour white chocolate into skillet. Help stir to melt chocolate.

11. Drizzle chocolate with a spoon over Rice Krispies.

12. Add sprinkles.

Notes:

  • To decorate for Halloween, drizzle white chocolate in multiple directions to give it a spider web look. Then top with Halloween sprinkles.
