Island Style Hot Cakes (Pancakes)

This recipe has been adapted from Charmoru Cuisine: A Marianas Cultural Legacy by Gerard and Mary Aflague.

Supplies

 Griddle, cast iron skillet, or fying pan
Ingredients
 1 ½ cups All-purpose flour
 3 ½ tsp baking powder
 ¼ tsp salt
 4 tsp granulated sugar
 1 ½ cups milk (2% or whole)
 1 egg
 3 tbsp melted unsalted butter
 coconut oil for griddle

Island Style Hot Cakes (Pancakes)

General Directions:

  1. In a large mixing bowl, combine flour, baking powder, salt, and sugar.
  2. Add milk, egg, and melted butter. Mix until batter is smooth.
  3. Heat griddle on medium-low heat.
  4. When hot, add small amount of coconut oil (spray or spread with paper towel).
  5. Using a ladle or oversized spoon, add pancake batter to griddle.
  6. Cook until bubbles appear on the top and the bottom is golden brown. Flip pancake with a spatula and cook until both sides are golden.
  7. Repeat steps 4-6 until you finish all batter.

Beginner:

1. Pour premeasured ingredients into mixing bowl. You can help with hand over hand assist to ensure it all gets into the bowl.

Experienced:

1. Pour premeasured ingredients into mixing bowl. With a large mixing spoon, help to combine all of the ingredients together.

Pro:

1. Help to measure dry ingredients and add to mixing bowl. Stir to combine (help stirring as needed).

2. Crack eggs into a separate bowl to ensure no shells end up in the mixing bowl. Mix eggs to fully combine egg whites and yolks. Pour eggs into mixing bowl. Pour in premeasured milk and melted butter. Stir to combine (help stirring as needed).

5. Help ladle or spoon pancake batter onto griddle.

6. Help to flip pancake (can use hand over hand to help flip) when ready.

Serving Suggestion: Top with fruit of choice and maple syrup or Kaya Jam. For a more tropical feel, use fruits such as mango, pineapple, dragon fruit, and shredded coconut. Your toddler can help wash and cut fruit using a toddler safe knife. In the picture above, we used mango, banana, blueberries, and shredded coconut.

Notes:

  1. When letting your toddler mix the wet and dry ingredients together, your batter will most likely be chunky instead of smooth. This is ok and the pancakes will still cook well.
  2. We like to double this recipe and freeze a batch of pancakes for easy breakfasts. To freeze, place cooled pancakes in a single layer on a cookie sheet and place in freezer for 1 hour. Then transfer to a freezer safe container for storage. This will help prevent pancakes from sticking together. To reheat from frozen, I recommend heating pancakes in a toaster oven on bake or in the oven for a few minutes.
  3. Cracking eggs tip: Either tap on flat surface or lift egg a couple of inches off the counter and lightly drop it onto the flat surface. Use both thumbs to then pull shell apart. This helps to open the egg without getting shells into the bowl.
