Hot Cocoa Cookie Bars

You need to try these hot cocoa cookie bars. I made these for the first time and we quickly became obsessed. They are the perfect winter cookie and are great to bring to your next holiday party!

Supplies
 Stand mixer with paddle attachment
 Mixing cups/spoons
 Small bowl
 Spatula
 Baking Dish 11x7
Ingredients
 1 cup unsalted butter (2 sticks - room temperature)
 1 cup sugar
  cup brown sugar
 2 eggs
 1 tsp vanilla extract
 ¾ cup hot cocoa mix
 3 ¼ cups all purpose flour
 2 tsp baking powder
 1 tsp baking soda
 pinch of salt
 1 cup chocolate chips

 3 ¼ cups all purpose flour
 2 tsp baking powder
 1 tsp baking soda

Hot Cocoa Cookie Bars

General Directions:

  1. Add butter and sugars to mixing bowl of stand mixer.
  2. Beat on medium to cream butter and sugar until fully combined and fluffy.
  3. Add eggs and vanilla. Beat to combine.
  4. Add hot cocoa mix and combine on stir.
  5. Gradually add in remaining dry ingredients by combining on stir.
  6. Add in chocolate chips and combine on stir.
  7. Chill for 30 minutes.
  8. Preheat oven to 350 degrees F.
  9. Transfer cookie dough to 11×7 baking pan lined with greased parchment paper.
  10. Press down on and mold cookie dough to baking pan, ensuring that it is evenly spread across the pan.
  11. Bake for 20-25 minutes, until center is no longer shiny on top.
  12. Cool completely before topping with Marshmallow Frosting (stay tuned for additional recipe!)

Notes:

  • I used a Mexican Hot Cocoa mix for this recipe and the added cinnamon in the mix was delicious. What ever mix you use, just remember that any added ingredients may alter the taste of this recipe.
  • I do not recommend using a sugar free mix.
  • These can also be cooked as cookies for 9-11 minutes if you prefer. Make sure to still top them with the Marshmallow Frosting!
