Egg Bites

The additional of cottage cheese makes these egg bites super moist. This recipe is highly customizable and is easy to add in a variety of vegetables and/or meat. These freeze well and make for great meals on the go or for easy mornings and snacks.

 1 cup cottage cheese
 1 ½ cups shredded cheese of choice
 ¼ tsp onion powder (optional)
 ground black pepper (to taste)

Egg Bites

General Directions:

  1. Preheat oven to 325 degrees F
  2. Add eggs, cottage cheese, 1 cup of shredded cheese, and seasonings to blender. Blend for 8-10 seconds, until mixture is smooth. Be sure not to overblend as too much air can collapse egg bites as they cook.
  3. Place muffin pan on cookie sheet.
  4. Grease muffin pan.
  5. Add any vegetables and meat to muffin pan. You can make them all the same or mix it up for a variety.
  6. Pour egg mixture into muffin pan.
  7. Top with remaining cheese.
  8. Add hot water to cookie sheet, just covering the bottom. This will keep egg bites soft and moist.
  9. Bake for 25-30 minutes, until egg bites have set.
  10. Remove from water and let sit for 5 minutes before removing from muffin pan. Egg bites should pop out of silicone muffin pan.

7. Sprinkle tops with cheese

Notes:

  • If adding vegetables:
    • Raw vegetables such as onion, bell pepper, or spinach
    • Cooked vegetables such as mushrooms, broccoli, bell peppers, cauliflower, potato, sweet potato
  • If adding meat such as bacon or sausage, cook them before adding to egg bites.
  • Mini muffin pan creates better toddler sized egg bites, especially for snacks.
